A sharp knife is a safe knife. It takes less pressure and requires less effort to complete your task from slicing meats to cutting vegetables. Heavy arm or wrist pressure with a dull knife can cause the blade to jump or slip as it tears through, and that’s how accidents happen.
The best way to keep a knife sharp, “is to wash it by hand with soapy hot water as soon as you’re done using it, and then give each side of the blade two or three strokes on a steel. “It’s like an emery board. It defines the edge, but doesn’t set or create an edge.”
Never put your carving knives in the dishwasher because the extremely high temperature of the drying cycle ruins the temper of the steel, which affects the knife’s ability to keep an edge. We use a wet stone slow moving so that temperature is never an issue. It allows for the least amount of metal removal and retains metal strength and integrity. Maybe your first proper edge, ever. Nicks removed and tips restored. We can take hard-worked blades that seem lost and make them better-than-new.

Serrated Blade Sharpening
There is a myth that serrated edges can not be sharpened. How untrue! Sometimes a serrated blade only needs to be re-sharpened since the serrations are well-defined. But we also use rat tail files that can help redefine those weak serrations.
